This month Patrick went on a business for a few days and turned 39. Yes, 39! I need to figure out what to do for the big 4-0. I've asked him what he wanted to do and he has no clue. I need to start planning his mom's 60th that is in July. We would really like to send her on a trip but not sure that will happen? Anyone have any cool ideas pass them on.
Little miss is good. She is all into her cowboy boots. She's likes to stuff her pants into the boots so she can show off the pink on the boots. Such a girl. She is doing well in school & reading is coming along as long as she feels confidant in what she is about to read. She gives up so fast so lots of praise & silliness to get her to try. Whatever works.
I'm trying new foods. This week I tried spaghetti squash and with some olive oil, sea salt, & pepper it was really good. Kinda sweet with some crunch. Then I put some sauce on it and that was good too. It's is loaded with nutrition and is very filling. I'll have it again for sure. Also, this week I made two a veggie soup that is really good. For those who are on Weight Watchers it is ZERO points for 1 cup. An easy way to get your veggies in. Here's the recipe if ya want to try it:
10 oz spinach, baby leaves
2 medium carrot(s), chopped
2 medium celery, ribs, chopped
1 large onion(s), chopped
1 medium garlic clove(s), minced
4 cup(s) vegetable broth
28 oz canned diced tomatoes
2 piece(s) bay leaf
1 Tbsp dried basil
1 tsp dried oregano
1/2 tsp red pepper flakes, crushed
Place all ingredients in a slow cooker; cover and cook on high power for 5 hours. Remove bay leaves, stir and serve.
